Texas limestone and Austin stone are what most homes around here already carry, which makes them the easy match for a new wall or column. Flagstone and ledger stone give more texture and are common on seat walls and fire pit surrounds. Manufactured veneer costs less and now looks convincing, but it is a facing rather than a structure, so it needs a proper backing wall behind it.
For anything holding back soil, the material matters less than what is behind it. A block or stone wall with gravel backfill, filter fabric and weep drainage will outlast a prettier wall built straight against dirt. When a client wants to cut cost on a retaining wall, we cut the facing material before we ever cut the drainage.

Almost always water. A wall without gravel backfill and weep drainage holds the pressure of saturated soil behind it, and eventually that pressure wins. The drainage is invisible once the job is done, which is exactly why it gets skipped on cheap bids.
